CORN CAKES

1 cup, yellow cornmeal (polenta) |
1 tbsp sugar |

____________________________________________ Combine cornmeal, flour, baking powder, salt, pepper, and sugar in medium bowl. Add eggs and onion and mix well. Add water and mix to form a stiff dough. Roll dough into small balls about 1 inch in diameter. Heat oil in deep heavy pot to 360F. Drop balls into oil and fry until golden, about 4 to 5 minutes for each batch. Drain on paper towels. |
