CORN CAKES
Serves 4

1 cup, yellow cornmeal (polenta)
1/3 cup white flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground red pepper

 

1 tbsp sugar
2 eggs, beaten
1 small onion, finely minced
2 tbsp water
4 cups vegetable oil for frying

Combine cornmeal, flour, baking powder, salt, pepper, and sugar in medium bowl. Add eggs and onion and mix well. Add water and mix to form a stiff dough.

Roll dough into small balls about 1 inch in diameter. Heat oil in deep heavy pot to 360F. Drop balls into oil and fry until golden, about 4 to 5 minutes for each batch. Drain on paper towels.
