GINGER BEER
Serves 4

1/2 LB fresh ginger
2 limes
1 1/2 cups sugar

 

1/2 tsp cream of tartar
1/2 gallon boiling water
1/2 tsp baking yeast

Wash & grate ginger, with peel. Place in large bowl or pitcher. Juice limes and add lime juice with peels, sugar and cream of tartar to the ginger.

Pour boiling water over mixture. Leave about 2 hours, stirring occasionally, until it has cooled to room temperature (VERY IMPORTANT).

Strain into pitcher, and sprinkle yeast over top. Leave about 5 minutes to soften yeast, then stir. Cover and leave at room temp for 24 hours. Strain again, chill, and serve.
